What to make this weekend to get ready for the week
- As always, clean your veggies (and herbs)
- Hard boil eggs
- Make some rice
- Mix up some overnight oats & pack them in to-go containers
Tuesday, October 14th
We were at a wedding this weekend so this meal plan is starting on Tuesday this week. We have some leftover radicchio from dinner on Friday, so going to turn that into a salad for lunch on Tuesday.
- Breakfast: Overnight Oats w/ Cashew Butter & Coconut Flakes
- Lunch: Radicchio Salad w/ Jammy Eggs & Toasted Pecans
- Dinner: Crispy-Skin Salmon & Chimichurri, Brown Rice, and Little Wedge Salad
Wednesday, October 15th
Unfreezing one of the mini-lasagnas I made a few weeks ago to cover a dinner & a lunch this week.
- Breakfast: Overnight Oats w/ Cashew Butter & Coconut Flakes
- Lunch: Pan Bagnat… the new go-to
- Dinner: Small Victories’ Lasagna
Thursday, October 16th
We also came back with a ton of eggs from the weekend – so doing a breakfast-for-dinner thing on Thursday.
- Breakfast: Classic Berry Smoothie
- Lunch: Leftover Lasagna
- Dinner: Soy Ginger Dinner Scramble
Friday, October 17th
Minimal cooking on Friday. For those of you who want to cook something more, check out other ideas here.
- Breakfast: Overnight Oats w/ Cashew Butter & Coconut Flakes
- Lunch: Family Lunch
- Dinner: Likely leftovers from the week.
