Review: In terms of time, this wasn’t too bad! We were really looking forward to having a nice stew simmering on the stove, but then ended up making this Roasted Broccoli & Tofu recipe that really blew up the day. Then we had to take a nap, and next thing you know, it’s 6pm and we’re just starting the stew.
Us: “Not to worry, the stew should only simmer for like 2 hrs. So eating at 9pm. Eh, could be worse I guess. We’ll survive. Wait… what’s that in Step 6?? Uncover and simmer for 2 MORE HOURS?? New plan, we’re eating lasagna leftovers and we’ll just let it simmer until we go to bed.”
So yeah, don’t forget to read through the recipe! When we finally did eat it on Monday night, it was quite delicious and totally worth the wait.
