Review: As my mom says, “winter is nature’s way of telling us to slow down and rest” and I couldn’t agree more. Short ribs have always been one of my favorite winter meals – my parents had a dinner party years ago where they made short ribs, and all day, I remember them carefully tending them and telling us how amazing they were going to be. My sisters and I all got some when they were done and my mind was blown. That deep brown sauce, with super tender meat, potatoes, onions. I had no idea that meat could taste like that.
So when we were looking for a Sunday meal, and Alison Roman had a short rib recipe with some spices, we were in. Just note that her spices (bird chile peppers, fennel seeds, cinnamon) all make this slightly different than other short ribs you’ve had. But just as delicious.
