What to do over the weekend to get ready for the week
- Clean your kale you dirty boy
- Cut up celery & carrots for some desk snacking
- Make your black bean garlic sauce for the Miso Polenta w/ Veggies then later find store-bought sauce in the fridge (our fridge isn’t even that big!)
Nothing Fancy’s Spiced & Braised Short Ribs with Creamy Potatoes
If you’re a regular visitor to the Jane & Zak meal plan you’re well aware of our love for a lengthy Sunday meal, there’s nothing better than popping on a LOTR audiobook and just getting lost in the recipe (and Middle Earth). These short ribs perfectly fit that bill of an all day recipe and was a great change-up from the wine braised short ribs we’re comfortable with making. While I think we do prefer the more classic version, what really stood out for me in AR’s recipe was the heat from the chiles de arbol (perfect for the cold weather) and the fact that it’s a one pot shop with both short ribs and potatoes cooking in your dutch oven.
Cook’s Illustrated Ultimate Veggie Burgers
This is one of those meals that comes together easier than you think and just relies on whatever ingredients you have in your fridge. Check it: Root around in your crisper and throw whatever leftover veggies you have in your kale salad – for the dressing we combined leftover korean hot wing sauce with tahini and touched up with lemon and olive oil. Veggie burgers we make a double batch twice a year and freeze it, easy. Finally, we had extra cukes and dressing from last week. What’s that? A delicious 3 course meal on a Monday!? F**k you adulthood, we got this.

Miso Polenta w/ Winter Vegetables & Tofu
One of the things I’ve been working on to better myself is knowing my limits and reconciling that with reality, for example if Google Maps says it takes 35 minutes to get to a bar in LES I’ll think I can do it in 25 and get confused when I arrive 35 minutes after departure. So, with this burgeoning purpose for realistic thought I was highly skeptical of Jane’s confidence in making focaccia dough AND and the Miso Polenta w/ A LOT of veggies. Well, Jane proved me wrong, the polenta was unreal, chock full of veggies and the dough was resting comfortably in our fridge by the end of the night. Maybe I can bend reality, but the more likely answer is that Jane’s damn good.
