Review: This was so easy. Literally whipped up in a little over a half hour. It calls for chicken thighs, and although I prefer to just buy a whole chicken and cut it up (you end up paying less per pound), I ended up going to our local butcher, The Meat Hook, and asked them to de-bone & de-skin the chicken thighs. They even gave me the skin & bones, which I’ll use for broth in the future (stored in a stasher bag in the freezer). This cut down a lot on the prep time, so then once I got home, we made the soup base using some frozen homemade stock, popped in the chicken & mushrooms, and it was all set.
Tasted delicious and was a nice, slightly brighter soup for #soupseason
