Review: I was recommended this recipe from a coworker and my lord, this was good. I loved the one-pot thing – very few dishes to clean and incredible flavor for not too many steps. The chicken gets nice and brown and then you nestle it back into the rice to finish the cooking process. This final cooking with the rice basically melts all the collagen off the chicken and gets it ridiculously tender. You seriously don’t need a knife when eating, the meat just pulls off the bone.
The peanut sauce is also so flavorful and addicting – I nearly ate it all just dipping cucumbers in while we were cooking. Luckily, I refrained from doing that because it is even better on the chicken.
This one is definitely going in the weeknight recipe rotation.
