Recipe: Ricotta from Smitten Kitchen, Pasta Dough from Small Victories, Vodka Sauce from Grossy Pelosi

Review: I really wanted a project this weekend. I had no plans on Saturday and I’ve been getting back into cooking so I was ready to spend Saturday in the kitchen – listening to podcasts, cleaning our CSA veggies, and making something special for dinner. I’m working on my creativity – but when I’m ready for a project, usually my first thought is homemade pasta. And while usually I go for Julia Turshen’s Lasagna from Small Victories, this time I wanted to go with tortellini.
But what to go with the tortellini? I’ve made Smitten Kitchen’s ricotta a few times before and not only is it incredibly delicious, but it is seriously easy. Really makes you wonder why you ever buy ricotta. So that’s decided – will fill the tortellini with ricotta.
Now the sauce. One of my favorite podcasts (kinda guilty pleasure… but honestly not really. I truly love it.) is Bad on Paper. It’s done by two women who live in Williamsburg, one of whom is a professional influencer, and one is a marketing freelancer. It’s very fun, an easy listen, and I look forward to it every Wednesday. Anyway – they had Grossy Pelosi on this past week and he said one of his most popular recipes is Vodka Sauce. Done. We’re doing tortellini with vodka sauce.
This was a very time consuming project, a true labor of love, but it was 100% worth the effort. Zak sautéed up some eggplant to go in there and once we paired everything together… my god. Homemade pasta is truly a revelation. We were giddy with happiness eating it. Make yourself a negroni and dig in.Just a warning – this whole thing is very rich.
So small portions. And maybe add a side salad.
